This is one of the many spaghetti squash recipes I have cooked. Great as a side dish or main dish.
1 spaghetti squash, halved lengthwise and seeded, 2 tbls. olive oil, 1 onion, chopped, 1 clove garlic, minced, 1 & 1/2 cups chopped tomatoes, 3/4 cup feta cheese, 3 tbls. sliced black olives, 2 tbls. chopped fresh basil.
- Preheat oven to 350 degrees. Lightly grease a baking sheet.
- Place squash with cut sides down on the prepared baking sheet, bake 30 minutes in preheated oven, until a sharp knife can be inserted with only a little resistance. Remove from oven and set aside to cool.
- Heat oil in a skillet over med. heat. Cook onion in oil until tender, add garlic; cook and stir 2 to 3 minutes. Stir in tomatoes and cook until tomatoes are warmed through.
- Use a large spoon or fork to scoop the stringy pulp from the squash and place in a med. bowl. Toss with the veg., feta, olives and basil. Serve warm.
